Mono-floral honey, such as acacia, chestnut and heather honey, is produced from a single floral source and expresses a unique range of sensory characteristics depending on its
"terroir."
Acacia honey, due to its very delicate flavour, does not alter flavours and is suitable as a sweetener.
Chestnut honey, on the other hand, is bitter and tannic, very rich in mineral salts and, due to the concentration of pollen, very nutritious.
Heather honey is the rarest, with an amber brown color and a flavor reminiscent of caramel, tamarind, and licorice.
Spread on a slice of wholemeal bread, it releases a delicately bitter aftertaste.
Multiflower honey is produced from a variety of floral sources harvested from a particular area. Its aromas and flavors vary depending on the harvest season and the area. Its decidedly sweet aroma features vegetal and berry notes.
